Sometimes, there’s nothing better than a recipe that comes together in less than 20 minutes, don’t you agree? What I’m about to share is not only delicious (obviously); it’s healthy, caters for vegetarians and goes from kitchen to plate in no time at all. The avocado makes this classic Italian pesto ultra creamy and tasty, and the zoodles sing with the sauce.

This recipe makes a whole lot of pesto, so feel free to either scoop the leftovers into a mason jar (keeps for up to a week in the fridge), or multiply the amount of zoodles to cater for a larger family. Either way, this is sure to be a hit!

The Recipe

Makes: 1 serving (+ extra pesto)

Ingredients:

  • 1 large zucchini, washed
  • 1 medium avocado
  • 1 1/2 cups fresh basil, washed
  • 1/3 cup pine nuts
  • 3/4 cup grated Parmesan cheese
  • 2/3 cup extra-virgin olive oil, plus extra for frying
  • 1 clove garlic, peeled
  • Salt and pepper to taste
