Easy Keto Carbonara

I love pasta. There – I said it. Always have done, always will. Giving it up when I switched to keto was a source of never-ending sorrow (no exaggeration)… That is, until I discovered the genius of spiralizers. Oh. My. GOODNESS. Granted, they look a little intimidating before you get to know them, but once you’ve gotten the hang of it, they make quick work of turning pretty much any vegetable – including zucchini – into noodles.

Pretty much any repenting carb-lover’s dream!

In this recipe, I combined low-carb zucchini noodles – or zoodles – with a classic, creamy carbonara sauce. The noodles are tossed and cooked in the sauce until they’re just cooked through, but still with that characteristic al dente texture – just like real pasta! The pancetta gives a lovely saltiness, and the egg yolk brings it all together in a truly gorgeous harmony of flavours.

In other words: YUM.

The Recipe

Makes: 1 serving

Ingredients

  • 1 large zucchini
  • 1 tbsp grass-fed butter
  • 4 oz pancetta, or cubed bacon
  • 1 cup pouring cream
  • Salt and pepper to taste
  • Parmesan cheese, for garnish
  • 1 pastured egg yolk (optional)
  1. Start by spiralizing the zucchini into long noodles. If you don’t have a spiralizer, you can use a julienne pepper and get almost the same effect. Set aside.Easy Keto Carbonara recipe | Ketoship

  4. Turn the heat down to low and add the cream. Stir, scraping the bottom of the pan so that all the lovely brown bits from the pancetta are incorporated in the sauce. Season with pepper.Easy Keto Carbonara recipe | Ketoship
  5. After a few minutes, add the zoodles to the pan and stir well, until they are coated. Cook for around 5 minutes, or until they have softened, but still retain their bite. Check for seasoning and adjust if necessary.Easy Keto Carbonara recipe | Ketoship
  6. To serve, transfer the noodles and sauce to a deep bowl. Make a well in the middle of the noodles and add the raw egg yolk. (If this makes you squeamish or you aren’t sure of the quality of your egg, skip this step! If not, it adds a gorgeous creaminess to the dish.)Easy Keto Carbonara recipe | Ketoship
