Delicious Keto Avocado BLT Salad | Ketoship

Is there anything better than eggs paired with avocado and bacon? There isn’t, is there? It’s just one of those things, where flavours mesh perfectly together and the sum of the parts makes something completely and utterly amazing.

That amazingness is what I was trying to capture in this delicious keto avocado BLT salad, and I think I did. The just-hard-boiled eggs combine beautifully with the crispy, salty bacon, the creamy avocado and the sharp mayonnaise that binds them all together. Spoon this gorgeously satisfying mix on top of a bed of greens – I used arugula here – and you’ve got an incredible breakfast-inspired salad that’ll keep you full for ages while delighting your tastebuds.

The Recipe

Makes: 1 serving (+ extra mayo)

Ingredients:

For the salad:

  • 2 pastured eggs, at room temperature
  • 2 rashers smoked bacon
  • 1 medium avocado, halved and pitted
  • 1 large handful greens (rocket, baby spinach, etc.)
  • Salt and pepper, to taste
  • Chilli flakes, for garnish

For the homemade mayonnaise:

  • 1 cup light olive oil (or avocado oil, or macadamia oil)
  • 1 large pastured egg, at room temperature
  • 1 1/2 tbsp lemon juice or apple cider vinegar
  • 1/2 tsp sea salt
  • 1 clove garlic, crushed
  1. Preheat your grill.
  2. Start by preparing your eggs: boil some water in a small saucepan and add the eggs. Cook for 8 minutes, then rinse under cold water to bring the temperature down. Peel and set aside.Delicious Keto Avocado BLT Salad | Ketoship
  3. While the eggs are cooking, line a baking sheet with foil and place your two rashers of bacon on it. Place baking sheet under your grill and cook until bacon is crispy, 5-7 minutes. (Watch it doesn’t burn!) Remove from the oven and leave to cool.Delicious Keto Avocado BLT Salad | Ketoship
  4. While the bacon is cooling, prepare your homemade mayo: add the oil to a large Mason jar. Add the egg and let it sink to the bottom. Add all your other seasonings.Delicious Keto Avocado BLT Salad | Ketoship
  5. Place the mouth of an immersion / stick blender all the way to the bottom of the Mason jar and turn it on. DO NOT MOVE IT for around 20 seconds. The mayonnaise will start forming!
  6. After around 20 seconds, slowly start pulling the stick blender upwards: the mayonnaise will continue forming around it as the oil gets mixed in with the egg. When all the ingredients are thoroughly incorporated, turn the blender off and gently pull it out. Check for seasonings and adjust accordingly.
  7. Chop your eggs roughly and add to a large mixing bowl along with the diced avocado and broken up bacon rashers. Add around 2 tbsp of mayonnaise and season with salt and pepper.Delicious Keto Avocado BLT Salad | Ketoship
  8. To serve, place your handful of greens at the bottom of a bowl and top with the delicious mixture. Sprinkle with chilli flakes and enjoy!Delicious Keto Avocado BLT Salad | Ketoship
